CHEESY BACON JALAPENO MUFFINS

1 box Easy Cheesy Jalapeno Beer Bread Mix
355 ml beer or any carbonated beverage
1/2 cup shredded cheddar cheese
12 strips precooked bacon
1/4 cup butter, melted
Serve with Hot Pepper Bacon Jam

Instructions

Preheat oven to 375°F. In a mixing bowl, add beverage to bread mix. Stir firmly for 20-30 seconds (batter will be lumpy). Do not over-mix. Fold in shredded cheese. Grease a 12 cup muffin tin. Line the inside edges with 1 strip of precooked bacon per cup. Pour batter into muffin cups 3/4 full and bake for 25 minutes or until golden brown. Brush the tops of the cooked muffins with melted butter. Serve warm with butter and Hot Pepper Bacon Jam.
